HOW TO COOK GOURMET PEKING DUCK
Peking duck is a traditional Chinese dish. It became popular
for its great taste. The traditional way how the Chinese cook it is the most
popular version of this dish. It originated in Beijing. How to cook the Peking duck is not
as difficult as you think but not as easy as it sounds. To learn how to cook it
requires knowing how to cook one dish, the Mandarin Pancake. But as usual, you
can make your own version of how to cook it by simply using some other kind of
Pancake. I tried many ways how to cook it and I tried using few kinds of
Pancakes. This recipe I am going to share with you, we will use Apple Pancake.
INGREDIENTS:
2 pcs calamansi
3 tablespoon of honey
100ml Shaongsing rice wine
5 tablespoon low sodium soy sauce
1 cinnamon stick
1 tablespoon Achuete sauce
3-4 pounds of duck
Apple Pancake
2 medium size cucumber (cut into strips)
2 tablespoon of chili sauce
½ cup spring onions (chopped)
COOKING PROCEDURE:
- Cut the calamansi into 2 pcs each and put in a sauce pan
- Add 1.3L of water, honey, soy sauce, rice wine, and spices. Boil for 20 minutes.
- In another pot, boil the duck for about 1 minute.
- Remove the duck from the pot and baste with the mixture of marinade.
- Leave uncover for about 4 hours.
- Preheat the oven in 480 degree F.
- Cook the duck in the oven until the duck is tender.
- Slice the duck into thin strips.
- Put a pancake in plate, add the duck stip on top of the pancake.
- Mizzle with chili sauce.
- Scatter with chopped spring onion.
- Decorate with cucmber strips.
