How To Cook Diningding- If you say you’ve been to Ilocos
before but have never tasted this Ilocano dish, then you have not been to
Ilocos really. This dish is one of many delicacies in that region and if you
are a vegetarian, Ilocos is the place you may want to visit. There are many
vegetable dishes in the country that vegetarians are craving for and if they
have ever tasted this Diningding, I am pretty sure this dish includes in their
lists.
There are many ways to cook Diningding since its name is a
general term for its kind and that means you can use many good combinations of
vegetables in cooking it. Many prefer leafy veggetables like jute, spinach,
malunggay leaves, you name it. But I am not gonna complain because all of these
vegetables are really good for cooking this dish. Here is how to cook
Diningding:
Ingredients
2 cups of deboned smoked fish (tinapa)
1 cup of string beans (cut into 2 inch long)
2 medium size ampalaya (cut into desired shape)
5 pieces of okra (cut into halves)
8 pieces of pumpkin blossom
1 medium size red onion (quartered)
1 cup of spinach
Boneless Fish bagoong to taste
3 cups of water
A pich of MSG (optional)
Cooking Procedure
- Fill in water in the casserole and bring to a boil.
- Add bagoong and onion. Continue boiling while removing the scum.
- Add vegetables and tinapa. Simmer until the vegetables are cooked.
- Check the saltness. Add bagoong according to your taste.
- Add the spinach and simmer for 2 minutes.
- Remove from heat and serve.
