How To Cook Stollen –this dish is another German food but it
is famous even in the United States. I had my first Stollen when I was like 12
years old and I couldn’t forget how was the taste like. It is delicious and
I was wondering why this kind pf dish is
not as popular as kebab and marzipan. I found out that this Stollen thing is
tricky to make and it requires a lot of ingredients so I thought that is why.
But it is worth the effort, believe me. It is good to prepare when you expect especial someone
coming to you for a visit like friends or relatives, they would fell the
hospitality just by eating this dish. The recipe I am going to share with you
is not mine, I don’t remember when I got it from though. Anyway, here is how to
cook Stollen:
Ingredients
2 tsp active yeast (dried)
6 ounce warm milk
1 egg
3 ounce caster sugar
2 ounce currants
12 ounce flour (prime or second class)
1 tsp salt
3 ounce butter
½ tsp cinnamon (ground)
1 tsp icing sugar
2 tbsp lemon extract
2 ounce sultanas
2 ounce red glace cherries (diced)
200 grams marzipan
Flaked almonds for topping.

Cooking Procedure
- In a bowl, pour in the warm milk, add yeast and dissolve. Let rest for 10 minutes.
- Add egg, sugar, butter, salt and flour. Mix perfectly until the dough is formed.
- Add lemon extract, cherries, sultanas and currants. Knead perfectly until the dough becomes smooth.
- Grease a large bowl with oil. Put the dough in it and turn until all the surfaces of dough is oiled.
- Cover with cloth and let rise in size for 1 hour.
- Grease a baking pan with oil. Put the dough in it and spread to create a wide area.
- Arrange and roll the marzipan in the center of the dough and fold to cover the marzipan. Tuck it in by pressing the seams together.
- Turn the dough upside down and let rest for an hour.
- Preheat the oven to 180 degrees C.
- Bake the dough for 10 minutes. Lower the heat to 150 C and let bake for half an hour.
- Remove from the oven and let it cool down.
- Scatter some icing sugar, cinnamon and almond flakes on the loaf.
- And serve with hot chocolate or coffee.
